This is a draft: we haven't tried it enough yet to call it a favourite.
Tuna Melt
Ingredients
Servings
- 60g (2¼oz) tuna, canned in brine, drained and flaked
- 1 spring onion, scallion, chopped
- 1 tbsp capers, chopped
- 1 heaped tbsp natural yogurt, thick
- 1 tsp American mustard
- 1 tsp white vinegar
- 2 tsp extra virgin olive oil
- 1 garlic clove, finely chopped
- Small handful of parsley, leaves, finely chopped
- 2 slices of bread, of choice
- 40g (1½oz) mature Cheddar cheese, grated
- salt, to taste
- pepper, to taste
Instructions
- In a bowl, mix the tuna with the spring onion, capers, natural yogurt, American mustard and white vinegar, then season with salt and pepper.
- In another small bowl, mix the extra virgin olive oil with the garlic clove and parsley, and season with salt and pepper.
- Brush the extra virgin olive oil mixture over one side of both slices of bread.
- Flip the bread slices over and spoon the tuna mixture onto the un-oiled sides.
- Sprinkle the mature Cheddar cheese over the tuna mixture and press the sandwich together.
- Cook either in an air fryer at 200°C (400°F), flipping it over halfway, until golden brown, or in a dry frying pan over a low-medium heat for a total of 5 minutes, flipping it so that both sides turn golden and the mature Cheddar cheese melts.
