The Club Sandwich Salad
Ingredients
Servings
- 320g grilled chicken breast, sliced or shredded
- 8 slices Parma ham
- 4 eggs
- 4 slices sourdough, cut into cubes
- 4 heads little gem lettuce, roughly chopped
- 4 handfuls cherry tomatoes, halved
- 2 avocado
- 1 red onion, small, very finely diced
- 8 tbsp full fat Greek yoghurt
- 4 tsp American mustard
- 4 tsp honey
- 2 lemon, juiced
- 2 tsp garlic granules
- olive oil, salt and pepper, to taste, for the croutons
- chives, to serve
Instructions
- Bring a saucepan of water to the boil, carefully lower in the eggs and cook for 8 minutes. Transfer to cold water, leave for a few minutes, then peel.
- Heat the oven or air fryer to 190°C.
- Add the sourdough cubes to a tray and toss through with olive oil, salt, pepper and some of the garlic granules. Bake until crisp and golden.
- Lay the Parma ham out in a single layer and cook for 5 to 7 minutes until crisp. Set aside to cool.
- Mix the Greek yoghurt, American mustard, honey, the lemon juice and the remaining garlic granules in the base of a mixing bowl, then season with salt and pepper. Taste and adjust the lemon, mustard and seasoning to suit you.
- Add the little gem lettuce, cherry tomatoes, red onion, the crispy ham, the croutons and the grilled chicken breast to the dressing.
- Roughly chop the eggs into large chunks and fold in, along with the avocado.
- Finish with extra chives and dive in.
Notes
So I LOVE a good club sandwich, it's the one thing I order every time I stay in a hotel. This is all those flavours — grilled chicken, oozy eggs, crispy bacon-style ham and crisp lettuce tossed in a creamy dressing with sourdough croutons for crunch.
