Hot Honey Halloumi Avocado Toast
Ingredients
Servings
- ½ avocado, ripe
- 3 tbsp parsley, finely chopped, split: 2 tbsp for the avocado + 1 tbsp optional topping
- Juice of 1 lemon
- 2 spring onions, scallions, finely chopped
- 5 tsp honey, split: 4 tsp for the honey-chilli mix + 1 tsp optional topping
- 3 tsp dried chilli flakes, split: 2 tsp for the honey-chilli mix + 1 tsp optional topping
- 2 eggs, medium, free-range, at room temperature
- 100g (3¼oz) halloumi, sliced about 1cm (½ inch) thick
- 2 slices of sourdough, or bread of choice
- salt, to taste
- pepper, to taste
Instructions
- In a bowl, mash the avocado and mix in most of the parsley, the lemon juice and the spring onions.
- Season with salt and pepper to taste, and set aside.
- In a separate small bowl, combine most of the honey, most of the dried chilli flakes and a little salt.
- Warm this mixture in the microwave on HIGH for about 15 seconds or until it turns runny.
- Fill a small pan with water and bring to a gentle boil, then carefully add the eggs and let them simmer for 6 minutes.
- Transfer the eggs to a bowl of iced water for 3 minutes, then peel once cooled.
- While the eggs are cooking, fry the halloumi slices over a medium-high heat for about 2 minutes on each side, drizzling with the warmed mixture as you flip the slices occasionally, until golden brown and sticky.
- Meanwhile, toast the sourdough.
- Spread the avocado mixture onto the toasted sourdough slices.
- Top with the sticky halloumi and the optional toppings of the remaining parsley, dried chilli flakes and honey.
- Halve the soft-boiled eggs and place them on the side or on top of each slice, based on your preference.
